SPICY PUMPKIN MUFFINS OR LOAF

Ingredients
  • 2 eggs
  • 2/3 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup golden raisins
  • 1/2 cup chopped nuts, optional
Preparation

In large bowl, with electric mixer, beat together eggs, sugar and oil. Beat in pumpkin. In separate bowl, mix together flour, baking powder and soda, salt and spices. Stir into creamed mixture. Stir in raisins and nuts. For muffins: Spoon batter into greased muffin tins, filling almost to top. Bake in 375o oven for 18 - 20 minutes or until tester comes out clean. For loaf: Pour batter into greased 9 x 5 inch loaf pan. Bake in 325o oven about 70 minutes or until tester comes out clean. Let cool in pan for 10 minutes, then turn out onto wire rack to cool completely. Store airtight in plastic wrap or bag. Can be frozen.
