MAPLE MUSTARD LAMB CHOPS

Ingredients
  • 2 tbsp. each maple syrup, Dijon mustard and balsamic vinegar
  • 1 large clove garlic, minced
  • 1 tbsp. chopped fresh rosemary (or 1-1/2 tsp crumbled dried)
  • 1/2 tsp. pepper
  • 8 lamb loin chops 1 inch thick
  • salt.
Preparation

In shallow glass dish, combine maple syrup, mustard, vinegar, garlic. Rosemary and pepper. add chops and turn to coat. Marinate at room temperature for 30 minutes, or cover and refrigerate, turning occasionally, for up to 8 hours. (Return meat to room temperature before cooking). Reserving the marinade, place chops on greased grill over medium high heat or in broiler. Cook, basting with marinade, for 5 - 7 minutes on each side for medium rare or to desired doneness. Season with salt to taste.
