LAMB ALMOND MEATBALLS

Ingredients
  • 1 slice of whole wheat bread
  • 1/4 cup milk
  • 2 tbsp olive oil
  • 1 finely chopped small onion
  • 1 minced garlic clove
  • 1/3 cup chopped almonds
  • (1/2 tsp turmeric
  • 1/4 tsp curry
  • 1 tbsp lemon juice
  • 1/4 cup dried cranberries
  • Salt and freshly ground pepper
  • 1 lb ground lamb
  • 1 egg
  • 1/4 tsp ground nutmeg
Preparation

Dip the slice of bread in milk for about 10 min.

In a big pot, heat the oil on medium heat and sweat the onion and the garlic for 1 min. Add the almonds, turmeric and curry. Continue cooking for 1 min. Remove from the heat, add the lemon juice, cranberries, salt and pepper. Mix well and let stand until lukewarm.

Incorporate the drained bread the lamb, nutmeg and the egg. � Make a dozen meatballs and lay them in an oven-safe dish. � . � Bake in a 180 �C (350 �F) pre-heated oven for 50 � 60 min. � Serve hot.
