BLUEBERRY-ORANGE MASCARPONE FLAN

Ingredients
  • l store bought sponge cake flan (200 g)
  • 2 tablespoons fresh orange juice or orange-flavored liqueur
  • 1 1/2 cups mascarpone cheese *
  • 1/4 cup granulated sugar
  • 2 teaspoons grated orange rind
  • 3 oranges, peeled and sectioned
  • 1 1/2 cups blueberries
  • Glaze: 1/4 cup orange marmalade (Optional)

    * (or blend 1 package (8oz) softened light cream cheese with 1/2 cup sour cream or extra thick yogurt.
Preparation

Drizzle cake flan with orange juice to moisten. In bowl combine mascarpone cheese, sugar and orange rind; spread evenly over cake flan. Arrange orange sections around outside edge of flan; place berries in center. In small saucepan, heat marmalade over low heat. While warm, brush over fruit. Refrigerate until serving time.
