Sage & Orange Chicken Burgers

Ingredients
  • 1 Lb. ground chicken finely grated peel of 1/2 orange
  • 1 tbsp. Dijon mustard
  • 1/2 tsp. dried sage
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne or black pepper (optional) <
  • 2 tsp. vegetable oil (optional)
Preparation

Preheat barbecue and lightly oil grill. In a large bowl, combine chicken with remaining ingredients, except oil. Work with a fork or your hands until blended. Shape into 4 burgers, each about 4 inches wide and 3/4 inch thick. Place burgers on grill about 4 inches above hot coals. Barbecue about 8 minutes per side. Or heat vegetable oil in a large frying pan set over medium-low heat. Add burgers and saut�, uncovered, until juices run clear, about 8 minutes per side.
