Rub-a-dub Chicken

Ingredients
  • finely grated peel of 1 lemon
  • 1 tsp. curry powder
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • 4 skinless, boneless chicken breasts
  • 2 tbsp. garlicky spread (below)
Preparation

Preheat barbecue. Mix peel with curry, cumin and salt. Rub all over chicken. Lightly brush one side of chicken with Garlicky Spread and place coated side down on barbecue. Grill for 8 min. Brush top with Garlicky Spread and turn. Brush again. Grill for 6 - 8 more min. Serves 4

Garlicky Spread
Stir 1/2 cup room temperature butter with 1/2 cup olive or other vegetable oil. 2 - 4 large minced garlic cloves and 2 tablespoons finely chopped parsley until blended. The oil keeps the spread soft enough to brush on meat, vegetables or bread without melting. Even when refrigerated, it can be spread easily on bread and keeps well, covered, for at least a week. It also freezes well. Makes about 1 cup.
