Chicken Schnitzel
Ingredients
- Chicken Breasts
- 1/3 cup flour with � tsp each salt, pepper and dried thyme
- 1 egg
- 2/3 cup dry bread crumbs with � cup chopped parsley
Whisk egg with 2 Tbls. Water
Coat chicken with flour mixture dip into egg mixture let drip off then dip into crumbs. Fry in oil until golden. Remove to platter and keep warm
Sauce

- 2 cloves garlic minced
- 1 tsp. Anchovy paste
- � cup chicken stock
- 1 tbsp. Lemon juice
- 1 tsp. Cornstarch/ 2 tsp. Cold water
