Chicken Schnitzel

Ingredients
  • Chicken Breasts
  • 1/3 cup flour with � tsp each salt, pepper and dried thyme
  • 1 egg
  • 2/3 cup dry bread crumbs with � cup chopped parsley

Whisk egg with 2 Tbls. Water

Coat chicken with flour mixture dip into egg mixture let drip off then dip into crumbs. Fry in oil until golden. Remove to platter and keep warm

Sauce
  • 2 cloves garlic minced
  • 1 tsp. Anchovy paste
  • � cup chicken stock
  • 1 tbsp. Lemon juice
  • 1 tsp. Cornstarch/ 2 tsp. Cold water
