Peach Cake from Georgia

Ingredients
  • 4 eggs
  • 2 cups sugar
  • 1 cup veg. oil
  • 3 cups flour
  • 1 tsp salt
  • 1 tab baking powder
  • 1/4 cup orange juice
  • 2 1/2 tsp vanilla extract
  • 2 cups sliced fresh peaches
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • confectioners' sugar
Preparation

Set oven 350�F. Beat eggs, sugar, oil. Combine flour, salt, baking powder, add to eggs mix, along with orange juice. Add vanilla.

Toss peaches with sugar and cinnamon. Pour 1/3 batter in greased tube pan. Add 1/2 peach mixture, add another 1/3 batter, then rest of peach mix.

Then rest of batter. Bake one hour. Sprinkle with the conf. sugar when done, after ten minutes of cooling. Serves 10
