MAPLE SPICE CAKE

Ingredients
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 tbs. baking powder
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. each ground cloves, allspice, nutmeg and ginger
  • 1/2 tsp. salt
  • 1 cup pure maple syrup
  • 1 cup natural soy milk
  • 2/3 cup canola oil
  • 2 eggs
  • 2 cups peeled and grated apples (about 3)
  • 1 cup raisins
  • 1 cup chopped walnuts or pecans
  • icing sugar (optional)
Preparation

Preheat oven to 350o. Lightly grease and flour a 13 x 9 inch baking pan, In a medium bowl, stir together flours, baking powder, baking soda, spices and salt. In a large bowl, whisk together maple syrup, soy milk, oil and eggs. Stir flour mixture into soy mixture just until blended. Stir in apples, raisins and nuts.

Turn into prepared pan and bake 35 - 40 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan on a rack. Dust with icing sugar.
