Liver & Onion Supreme

Ingredients
    Fry � LB of bacon and set it to drain on paper towels. Have 1-LB liver sliced thin. Dip each slice in the following mixture.
  • � c flour
  • 1 heaping tsp. dry mustard,
  • Salt, pepper and accent
Preparation

Fry quickly on each side in the hot bacon fat turning just as it starts to brown but do not cook through. Lay the lightly browned slices in a baking dish. When all the slices are browned, partially cook a chopped large onion in the remaining fat. In the same pan, when onion starts to brown scrape it all into the baking dish and spread it over the top of the liver. Cover tightly and put in a 325�F oven for 1 hour. Remove cover just before serving.

Lay bacon slices on top to heat.

Delicious with baked potatoes as it makes its own gravy.
