Beef and snow peas

Ingredients
  • 1/4 cup Fresh orange juice
  • 1 Tbsp Hoisin sauce
  • 1 Tbsp. soy sauce
  • 1 tsp. Cornstarch
  • 1 tsp. Grated orange rind
  • 3 tbsp. Vegetable oil
  • 12 oz. Sirloin steak, thinly sliced across the grain
  • 2 Cloves garlic, minced.
  • 1/2 tsp. Hot red pepper flakes
  • 8 oz. snow peas or sugar snap peas, trimmed
  • 1 Small sweet red pepper, chopped (Optional)
  • Salt and pepper
Preparation

In small bowl, combine orange juice, hoisin sauce, soy sauce. cornstarch and orange rind; set aside. In wok or very large skillet over medium-high heat 2 tbsp. of the oil Add beef and stir-fry for 1 to 2 minutes or until beef loses its red color. Transfer meat to bowl. Add remaining oil to pan. Add garlic, hot red pepper flakes, snow peas, red pepper (if using) and 2 tbsp water; stir-fry until tender-crisp about 2 minutes. Return beef to pan. Add orange juice mixture, stir until sauce thickens, about 2 minutes. Add salt and pepper to taste. Serve immediately over rice, rice noodles or curly Chinese noodles.
