Any type of bean may be used, as well as lentils or split-peas. Puree the beans in a food processor or food mill. Add the eggs, bread crumbs, salt, and pepper, and mix well. Shape the mixture into patties and coat with bread crumbs. Fry in hot oil until golden brown on both sides. Serves 4 - 6. |
