Hot Artichoke Dip

Ingredients
  • 4 medium green onions with tops
  • 1 - 16 oz. can artichoke hearts
  • 1/2 cup mayonnaise or salad dressing ( I used mayo )
  • 1/2 cup grated parmesan
  • Triscuits or any other type of crackers
Preparation

Peel and chop the green onions, Drain the artichokes in a strainer, then chop into small pieces. Mix the green onions, artichoke hearts, mayonnaise and Parmesan cheese in an ungreased Corning ware dish. Cover and microwave on medium-high ( 70 % ) 3 to 4 minutes, stirring after 2 minutes. ( When I remove the dip from the microwave, I lightly sprinkle more parmesan on the top - it looks nice and tastes good too! )

You can prepare this dip ahead of time and refrigerate for up to 24 hours. Heat when ready to serve.

For a low-fat version:
Use 1/3 cup plain fat-free yogurt and 3 Tbsp. reduced-fat mayonnaise instead of the 1/2 cup mayonnaise.
