Garlic-Herb Potato Nests

Ingredients
  • 2 Cups grated peeled potatoes, drained and squeezed dry. (I used Yukon Gold potatoes and used a mandolin to make the smallest sticks.) Then I wrung them dry in a clean dish towel.
  • 1 egg white lightly beaten.
  • 1/4 teaspoon salt.
  • 1/8 teaspoon pepper
  • 1/3 cup garlic-herb cheese spread.
  • Fresh dill sprigs.

Note: I added cayenne powder and garlic powder to give it more of a spark, to your taste.

Preparation

In a bowl combine the potatoes, egg white, salt and pepper and spices, Place 1 tablespoonful in each of 24 greased miniature muffin cups, lining the bottom and sides of cups.

Bake at 375 degrees for 20 to 25 minutes or until golden brown. Cool for 5 min. in pan before removing from pans to wire racks to cool completely.

Shape 1/3 teaspoonful of cheese in oval shapes; place in potato nests, garnish with dill. Serve at room temp.

Note: I found it easier to have cheese at room temp to shape ovals, and place on parchment paper on cookie sheet. Place in freezer for 5 minutes before placing in nests.
