Garlic-Herb Potato NestsIngredients
Note: I added cayenne powder and garlic powder to give it more of a spark, to your taste. PreparationIn a bowl combine the potatoes, egg white, salt and pepper and spices, Place 1 tablespoonful in each of 24 greased miniature muffin cups, lining the bottom and sides of cups. Bake at 375 degrees for 20 to 25 minutes or until golden brown. Cool for 5 min. in pan before removing from pans to wire racks to cool completely. Shape 1/3 teaspoonful of cheese in oval shapes; place in potato nests, garnish with dill. Serve at room temp. Note: I found it easier to have cheese at room temp to shape ovals, and place on parchment paper on cookie sheet. Place in freezer for 5 minutes before placing in nests. |
