CHEESY SHRIMP CANAPES

Ingredients
  • 10 slices white bread
  • 2 Tbls. Butter
  • � tsp. Thyme leaves
  • � of 8 oz. Package frozen shelled, deveined shrimp, cooked and chopped
  • � cup Shredded Swiss cheese or Gruyere
  • 1/3 cup mayonnaise
  • � cup fresh bread crumbs
  • � tsp. Salt
Preparation

Preheat oven to 400 f. Using 2 inch round fluted cookie cutter, cut 2 circles from bread slice (reserve leftover pieces to make fresh bread crumbs).

In 1 quart saucepan over low heat, melt butter with thyme leaves. With pastry brush, brush bread circles with melted butter mixture; place on small cookie sheet. Bake 10 minutes or until circles are golden.

Meanwhile, combine shrimp with remaining ingredients . Shape shrimp mixture into 20 balls.

Preheat broiler, Lightly press the shrimp balls onto the toasted bread circles. About 7 to 9 inches from source of heat or at least 450o F. broil shrimp canap�s 10 minutes or until they are hot and bubbly.
