Mix all ingredients except cheese
in one bowl. Grease cast iron skillet &
heat. Sprinkle skillet with cornmeal,
pour batter into skillet. Cut cheese
into strips and lay it on top of batter. Bake at 350 degrees for one hour. Good hot or cold.
NOTE: You can add 1 pound of well cook
and drained pork or beef ground meat for a cajun taste.
This can be made 1 month ahead of time, cut into small squares and frozen.
Make as many as you think you need.
To keep cheese from burning I push cheese into batter.

1 Cup of Cornmeal
1/2 Cup Cooking Oil
1 Tsp. of Salt
1 Can Cream Style Corn
1 Cup of Milk
2 Eggs
1 Large Onion, Diced
3 OR 4 Hot Peppers
4 Slices of American Cheese
