Crawfish Pie

1 lb. Dressed Crawfish (with fat)
3/4 Stick Butter
1 Onion
1 Bell Pepper
1 Stem Celery
1 Can Cream of Mushroom Soup
1 Pie Shell and Top
2 Tblsps. Chopped Onion Tops and Parsley

Chop green seasonings fine. Brown butter in heavy skillet and add chopped seasonings to saute'. Add crawfish, crawfish fat, mushroom soup and a little water to mixture. Cover and simmer 20 minutes. Next add onion tops and parsly and cook another 10-15 minutes. Place in pie shell and cover with top.
Bake at 300 degrees until pie crust is brown.
