Mexican Cornbread
1 cup whole milk
1 1/2 cup sharp cheddar cheese
1/3 cup oil
1/2 cup chopped onion
1 can mexican corn, drained
1 tsp garlic chopped (optional)
1 small jar pimentos
3 jalapeno peppers
1/2 tsp sugar
1 cup of self rising corn meal
3 eggs
Mix and Bake in oven preheated to 450 degrees until done .
This is delicious served with cooked dried beans such as great northerns or pintos. Add a side dish of cole slaw and some home fried potatoes and garden fresh tomatoes, and who cares if you  even have meat on the table ? I guess the cat is out of the bag, and you now know I am a southern girl.   A southern Country girl that is!
