Gizzards




Ingredients for cooking Gizzards
3 pounds of Gizzards 4 cups of water 1 can of Chicken Broth 1 onion 1 green pepper 1 tbsp of "Adobo" Procedure for cooking Gizzards: - Cut the onion into slices y cut the green pepper into 10-12 long slices. - With a knife, cut the fat from the sides of each gizzard, and cut gizzard in half. - Put all the ingredients in a 4-5 quarts Dutch Oven (cooking pan). - Turn heat to medium high. When the water starts to boil, lower heat to medium and put the lid on the cooking pot. - Cook for 30 minutes. Later on, you will utilize one (1) cup of this water in cooking the gizzards sauce (see procedure below). - Turn off stove.
Ingredients to cook Gizzards Sauce
3 garlic cloves 1� onion 1� cup of tomato sauce 1� cup of Ketchup 2 tbsp of Worcestershire sauce 2 tbsp of cooking oil 1� tsp of lemon juice 1 cup of gizzards water (from previous procedure) Procedure to cook Sauce: - Put cooking oil in frying pan and turn heat to medium high. - Peal garlic cloves and grind in Mortar. - Cut onion into little squares, and place them in frying pan. - Soften (Sautee) the onion in frying pan. - Turn heat to low. - Add grinded garlic. - Add lemon juice, tomato sauce, Ketchup, and Worcestershire sauce. - Add gizzards water. - Cook for 15-20 minutes and turn off stove. Final Procedure: - Drain water from cooking pot. Remove onion and green pepper and discard them. - Place gizzards in Pyrex baking dish (9" x 13") - Pour sauce evenly over the gizzards.
