Ground Beef "Alcapurrias"




Ingredients for making "alcapurrias" dough
4 pounds of taro roots 2 sets of green bananas (1 set = 10-12 bananas) 1 tbsp of annatto seeds 1 cup of oil 1 package of "Saz�n" (� tsp) 1 tbsp "Sofrito" (green pepper, onion, cilantro, garlic, recao, sweet pepper) Salt to taste Procedure: - Pour oil into frying pan and place annatto seeds in pan. Cook at medium heat. Stir occasionally and remove pan from heat when the oil starts to bubble or turns red. - Peel green bananas and taro roots. Put them inside a bowl with salt and water. - Using the grater side with the smallest openings, grate the bananas, and taro roots. - Place the grated mix on large bowl and stir the mixture until well blended. - Add to the mix the following ingredients: "sofrito", and "sazon". - Remove the annatto seeds from the oil and add oil to the mix. - Mix all ingredients with a spoon until well blended. - Taste the mix to ensure it has enough salt. If not, add more salt to taste.
Ingredients for cooking ground beef
2 lbs of ground beef 1 tbsp of "Adobo" (salt, cumin, garlic, black pepper, turmeric) 1 tbsp "Sofrito" 1 package of "Saz�n" (� tsp) � cup of water 4 oz of tomato sauce Procedure: - Mix all the ingredients in a cooking ppot. - Cook the ground beef in medium high heat. - When the beef is cooked, change temperature to low heat.
Ingredients for making one (1) "alcapurria"
1 large spoon of "alcapurria" dough 1 tbsp of ground beef 1 piece of wax paper (approximately 10" x 12") Procedure: - Place wax paper on flat surface. - Place "alcapurria" dough on top of wax paper and spread to the sides covering an area of approximately 3" wide by 5" long. - Place ground beef in the middle of the dough. - Fold paper by the side with the largesst length to seal the grounf beef inside the dough. - Wrap the "alcapurria" with the wax papper. - Place "alcapurria" in freezer for at least one hour. - Fry at medium heat and turn around until both sides are golden brown. - Remove "alcapurria" from fry pan and place it on paper towel to drain the oil it has absorbed. - Repeat above steps for the remaining "alcapurrias".
