I've never committed this recipe to paper before, it's always been stored in my big brain. Keep it somewhere safe, I don't want every freakin' Tom, Dick, or Harry cooking my secret recipe. Ingredients: 1 tablespoon olive oil 1 medium onion 3-4 pieces garlic 1 large pepper (green or red) 2 green chillies 1 tin chopped tomatoes 1 tin kidney beans tomato puree 1 heaped tablespoon cumin powder (this is the most essential ingredient dufus) 1 flat tablespoon mild chilli powder (or more if you like it a spicy huh?) 1 beef stock cube 5 rashers smoked bacon 1/2 pound lean mince 1 bottle of beer Salt and pepper to taste Method: Finely chop Onion, Garlic, Pepper and chillies. Fry in the olive oil until beginning to soften. Finely chop bacon and add to the pan along with your mince. When all meat is cooked thoroughly, drain off excess fat. Now add your cumin and chilli powder along with the crumbled stock cube and some salt and pepper. Fry briefly until mixed well. Pour in your bottle of beer reserving a couple of mouthfuls for yourself. Allow to reduce for a couple of minutes. Now add your can of tomatoes (you could always chop up some fresh ones if you can be arsed). Maybe add a wee drop of water at this point too, just so that it doesn't dry out too much while simmering later. Bring this to the boil and add tomato puree to get a satisfactory consistency. I would estimate about 2 tablespoons of puree. Put kidney beans in a sieve or colander and drain off all starch under the tap. Dump them in the freakin pot. Simmer uncovered for at least 45 mins, the longer the better. Add salt and pepper to taste and serve with rice (I'm assuming you don't need instructions on how to cook rice, they can normally be found on the packet just in case) or pasta (ditto) with a wee dollop of sour cream. Garnish with a sprig of coriander and Enjoy!!!!! |
