Cheese Pudding serves 2
(from the George Bernard Shaw Vegetarian Cookbook,

2 oz butter
2 oz flour
1 tumbler milk
4 oz finely grated dry cheddar cheese
2 large eggs, separated
Salt & pepper
grease an oven proof dish
set the oven to 350° F / 180° / Mark 4
Whip the egg yolks
Whip the egg whites until stiff
Melt the butter in a small saucepan.
Mix the flour with it & stir for 4 minutes over a gentle heat.
Mix in the milk gradually & stir until it has simmered for 5 minutes.
Remove from the heat , then add almost all of the cheese, and the whipped egg yolks.
Stir in the whipped egg white
Pour into the dish and sprinkle the remaining cheese over it.
Cook for about 20 minutes
