Lemon Grass Coconut Rice
1 cup Basmati rice (washed and drained)
2 stalks lemongrass (bottom 6 inches only)
1 can Coconut juice
1 tbsp butter
½ tsp Cardamom
Salt
Wash the rice under running cold water until water runs clear. Cut up lemongrass to 2" lengths. Bruise the lemongrass stalks by hitting it with the blunt end of a knife or hammer.
Place rice, lemongrass, spices, and butter in a microwavable dish. Pour Coconut milk in a measuring cup. Add water until you have a total of 1 1/4 cup of liquid. Stir in with rice mixture. Cover and cook on high for 6 minutes. Stir. Cover and continue to cook for an additional 6 minutes. Let stand for 5 minutes. Remove Lemongrass stalks before serving.
