Fruit Salad Cake - from Martine
Ingredients:
2 Cups flour
1 ¼ cup sugar
2 tsp baking soda
½ tsp salt
1 egg (well beaten)
1 tsp vanilla
1 can fruit salad (20 ounces) with the juice
Garnishing:
½ cup brown sugar
½ cup nuts or raisins (optional)
Sauce:
1 can Carnation evaporated milk
1 cup brown sugar
¼ cup butter
Preheat oven at 350* F.
In a large bowl, mix all the dry ingredients: flour, sugar, soda, and salt.
Add the vanilla, egg, and fruit salad with the juice. Mix well.
Spread evenly in an ungreased baking dish. Add garnish on top.
Bake for 50-60 minutes.
Sauce: Mix all three ingredients and cook at medium heat. Mix for 5-8 minutes (sugar and butter must melt together). The sauce must be getting a little thicker.
Serve cake warm with sauce on top. You can serve the cake without the sauce too.
