Fast & Easy Seafood Chowder:

4 medium red potatoes (peeled) (2 small or 1 medium per person)

1/2 white onion (Sliced and quartered)

3 eggs

1/2 cup corn

1/4 cup peas

1 can cream of mushroom soup

1 tbsp Cilantro

1 tbsp Basil

1 tbsp Garlic

Salt/Pepper to taste

1 cup Fish (can use cooked salmon, or Mahi Mahi or any other left over fish without bone or skin)

Peel and cut up potatoes into 1" cubes. Rinse and boil. Boil eggs for about 5 minutes or until hard boiled. Cool, peel shells and slice. When potatoes are almost soft, rinse and drain. In same pot, add mushroom soup and 1/2 can of water. Stir until smooth. Now add all remaining ingredients. Simmer for 10 minutes. Serve 4. Great with french bread.
