Diane's Galettes a la Melasse:
2 1/2 cups flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
2/3 cups grease
2 eggs
1/4 cup molasses - black -
1 cup brown sugar
Prepare oven at 375. Mix flour, soda, spices, and salt in a bowl. In a separate bowl, combine the grease, sugar, eggs and molasses. Slowly add the dry mixture into the wet mixture, a little bit at a time until everything has been blended thoroughly. Make into 1" balls and flatten on a greased cookie sheet. Bake for 8 - 10 minutes.
