Chocolate Mango Non-Cheesecake

 

This is excellent for vegans or lactose intolerants. Flavour and texture can fool anyone who normally doesn’t like tofu. Don’t tell until they try it! They will be pleasantly surprised!

 

Pre-heat oven to 350*

 

Ingredients:

 

Crust:

2 Cups graham cracker crumbs

1/3 Cup Brown sugar

1/3 Cup Cocoa

¼ Cup Margarine

3 tbsp Honey

 

Filling:

2 pkg silken Mango Tofu (300g per pkg)

  • Note: Other fruit flavours can be used

½ Cup brown sugar

¾ cup Cocoa

3 tbsp honey

1 tsp vanilla

6 tbsp all purpose flour

 

Directions:

 

For crust, use an ungreased 8 x 10 glass baking dish. Mix all ingredients thoroughly. Flatten crust mixture into baking dish using a wooden spoon. Set aside.

 

For filling, mix all ingredients in bowl. Pour into crust. Bake for 30-40 minutes. To decorate, place sliced mangos or other fruit on top and drizzle with chocolate sauce. Let cool then refridgerate for 3 hours.
