ITALIAN BEEF ROLL-UPS
I got this recipe out of one of those pamphlets you buy at the checkout stand. My wife and I love this dish. Although it does make eight meat rolls, they are delicious as a leftover heated back up. I have also made them for my mother and my two sisters and their families and they loved them. We serve this with garlic bread and a fresh green tossed salad. I hope you enjoy it.
Ingredients
1 (9 ounce) pkg Frozen Chopped Broccoli
1 3/4 cups water
3 tablespoons butter or margarine
2 cups Mashed Potato Flakes
3/4 cup milk
1 ounce (1/4 cup) shredded Parmesan Cheese
8 (1/8th inch thick) slices cooked roast beef (from deli)
1 (12 ounce) jar of Homestyle Beef Gravy
1 (14.5 ounce) can Diced Tomatoes with garlic, oregano, and basil, undrained
2 tablespoons chopped fresh Parsley
2 tablespoons shredded fresh Parmesan cheese
Directions
1. Heat oven to 375. Spray 13 x 9 inch (3 quart) baking dish with non stick cooking spray. Cook broccoli as directed on package. Drain.

2. In medium saucepan, bring water and butter to a boil. Remove from heat. Stir in potato flakes and milk; mix well. Stir in 1/4 cup Parmesan cheese and cooked broccoli.

3. Spread about 1/2 cup of potato mixture on each beef slice; roll up. Place beef rolls, seem side down, in sprayed baking dish.

4. In medium bowl, combine gravy and diced tomatoes; mix well. Spoon over beef rolls in dish. Cover with foil.

5 Bake at 375 for 25 minutes. Uncover, bake an additional 5 to 10 minutes or until bubbly. Sprinkle with parsley and 2 tablespoons shredded Parmesan cheese.
