1 to 1 & ½ lbs. Stew beef
8 large potatoes
6 carrots
1 onion
Cilantro
Seasonings (Salt, Pepper, Garlic, etc.)
Shortening
Cut stew beef up into smaller pieces. Put into pan and cover with water; add 1 to 2 Tbsp. shortening. Boil until water boils down and beef starts to brown; add seasonings and sliced onions. After beef is browned, place in crock-pot. Add enough water to fill half way. Add peeled and cut up potatoes and carrots. Chop cilantro up fine and add to crock-pot. Turn crock-pot on low for 6 to eight hours.
If you want a thicker stew, add ¼ to ½ cup of pearl barley to stew when you add the vegetables.
