1 15 ounce can pineapple chunks, drained
2/3 cup chopped celery
½ cup chopped pecans
½ cup Mayonnaise
½ tsp. Salt
1/8 tsp. Paprika
1 small head of lettuce, shredded
1 11 ounce can of mandarin oranges, drained
Combine pineapple, celery, pecans, mayonnaise, salt, and paprika, mixing well. Chill. Arrange lettuce on individual salad plates; top with pineapple mixture. Garnish with mandarin oranges.
