4 Boneless, Skinless Chicken Breast Halves
2 Tbsp. Oil
2 Tbsp. Lime Juice
1 Tsp. Honey
1-Cup Finely Crushed Tortilla Chips
1 Jar Salsa
2 Tbsp. Chopped Cilantro
1/2 Cup Grated Monterey Jack Cheese
Brush chicken breasts with a mixture of oil, limejuice and honey; then roll in tortilla chip crumbs to coat.
Bake for 20 to 25 minutes at 350 degrees.
While the chicken is baking, stir cilantro into the salsa. Remove chicken from oven, top with the salsa, and sprinkle with cheese. Bake again for 5 minutes or until the cheese melts.
