2 cans cream of chicken soup
1 stick margarine, melted
1/2 cup chopped onion
1 1/2 cups grated cheese of choice
1 (8oz.) carton sour cream
1 tsp. salt
1/2 tsp. pepper
1 (30oz.) bag country-style hash browns
Combine soup, margarine, onion, cheese, sour cream, salt and pepper in large mixing bowl until well blended. Stir in hash browns and mix well. Spread mixture in large casserole dish; add topping and bake 30 minutes at 350.
Topping Mix: 2 cups crushed Ritz crackers and 1 stick margarine mixed together.
