1 & ½ cups cooking oil
2 cups sugar
3 eggs, beaten
2 tsp. Vanilla
3 cups flour
2 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
2 tsp. Cinnamon
2 cups finely shredded carrots
1 small can crushed pineapple
1 cup nuts, chopped
Combine oil, sugar, eggs, and vanilla. Sift flour, baking powder, baking soda, salt, and cinnamon. Add to sugar mixture. Mix in pineapple, carrots and nuts.
Pour into a 9”x13” pan which has been greased and bake for 50 minutes at 350 degrees. Frost with cream cheese frosting.
