What is left unsaid is the type of drink; the sex of the bartender; and what the conversation was about. You see, when this man sees this other man and he pours him whiskey, the two are searching to bond as friends even if the night ends up in a brawl. If the man pours water, the drinker is searching for knowledge. Now the bartender could be a woman. If she pours water the man must have chapped lips. If she pours whiskey she expects a tip. Here is the curve ball, if you will. She can pour him milk because the man needs nurtured. The male bartender would never nurture, only offer advise, or a catchy play on words. The woman offers emotions and comfort. It's proven throughout history.
In view of the brawl, there may or may not be pent up emotions, although many usually exists. Historically, men wage wars and women support through knowledge of sociology of the man. Engraved in chromosomes which create women are categories of skepticism, knowing each person has the same dream of the right companion. Usually a man and a woman.
The physiology of the joke begins with a smile, because the 'guy walking into a bar' is paired in the brain with receptors preparing for laughter, thus causing a smile. The contested predictions of the end of the earth may breed skepticism or hatred. In my perfect world the bars would serve conversations without judgment or contradiction. Religion shall rule conversation once again. A man/woman walking into a bar would be greeted at the door and concern would be felt. Depending on the results of the door persons analysis, entry could be denied.
