Sweet and Sour Sauce


½ cup sugar (or brown sugar)
½ cup chicken broth or water
1/3 teaspoon vinegar
1 teaspoon vegetable oil
¼ teaspoon salt
1 teaspoon soy sauce
1 clove garlic, crushed
2 tablespoons cornstarch
2 tablespoons cold water
1 medium tomato, cut into small pieces
1 small green pepper, cut into small pieces
1 can (8 ½ ounces) pineapple chunks in syrup, drained

Heat sugar, broth, vinegar, oil, soy sauce, salt and garlic to boiling in a 2 quart saucepan over medium-high heat, stirring occasionally. Mix cornstarch and water; stir into sugar mixture. Cook and stir until thickened, about 10 seconds. Stir in tomatoe, green pepper and pineapple. Heat to boiling.
