Pickle Recipes



Various pickle recipes from aunts and other relatives. Use at your own risk, but feel free to make modifications or corrections.

Bread & Butter Pickles (Betty)

2 gal. cucumbers 1 tsp. celery seed
1 gal. onions � cup mustard seed
� cup salt 2 � qts. vinegar
16 cups sugar 1 tbsp. turmeric
1 tsp. cloves

Soak cucumbers, onions, salt, seeds and vinegar overnight. Add sugar, turmeric, cloves. Bring to boil and seal.




Bread & Butter Pickles (Hazel Perkins)

25 to 30 medium-size cucumbers 5 cups cider vinegar
8 large white onions 5 cups sugar
2 large sweet peppers 2 tbsp. mustard seed
� cup salt 1 tsp. turmeric
� tsp. cloves

Wash cucumbers and slice as thin as possible. Chop onions & peppers; combine with cucumbers & salt; let stand 3 hours & drain. Combine vinegar, sugar, & spices in large preserving kettle and bring to boil. Add drained cucumbers; heat thoroughly but do not boil. Pack while hot into sterilized jars and seal at once.

6 qts. cucumbers 6 cups sugar
6 medium onions 1 tsp. turmeric
1 cup salt � cup mustard seed
6 cups vinegar 1 tbsp. celery seed

Wash cucumbers and slice as thin as possible. Chop onions; combine with cucumbers & salt; let stand 3 hours & drain. Combine vinegar, sugar & spices in preserving kettle and bring to boil. Add drained cucumbers; heat thoroughly but do not boil. Pack into sterilized jars and seal.




Sweet Pickles

6 qts. medium-size cucumbers 1 pt. salt
1 gal. water 1 tbsp. alum
5 pts. vinegar 9 cups sugar
1 cup whole pickling spice


Wash & slice cucumbers, cutting them into chunks. Cover with brine of salt & water. Let stand one week in a cool room, stirring every day to keep mold off. Put in refrigerator.

Drain and cover with boiling water and alum. Let stand 24 hours; drain. Heat vinegar, 6 cups sugar, & pickling spice to boiling. Pick out all of the red peppers but 5 or 6; discard. Pour over drained pickles.

For the next 3 mornings, drain and pour 1 cup sugar with boiling water over pickles. On the 4th morning, pour boiling water over the pickles without sugar. Put in sterilized jars and seal.




Dill Pickles (Cloie)

Cucumbers 1 cup vinegar
Dill � cup salt
1 qt. water


Wash cucumbers and pack into jars. Place several sprays of dill on top. Heat water, vinegar, and salt to boiling. Cool, pour over cucumbers and seal. This liquid will become cloudy in a few days but will soon clear, leaving pickles fresh, firm, & evenly colored.
