Raita Cooler
Ingredients:
1 pot of Greek Yogurt (plain un-sweetened full-fat yogurt).
1 Pepino or one-third of a Cucumber( finely diced, including skin).
¾tsp. dried Spearmint or all the leaves from 1 stem of fresh Mint (chopped).
Method:
Put all the ingredients in a small bowl and mix well.
Refrigerate (covered) for at least 2 hours.
Sprinkle with a pinch of Cinnamon powder prior to serving.
Onion Raita
Ingredients:
1 Red Onion (diced).
1Tbl. Tomato Puree (single strength), or Ketchup.
½tsp. Paprika.
Method:
Put all the ingredients in a small bowl and mix well.
Refrigerate (covered) for at least 2 hours.
Serve as condiments with Poppadoms, Onion Bhajis or Samosas.
