Madras (VERY HOT) serves 4
Spices (a):
1tsp. Turmeric.
2tsp. Chilli powder.
1tsp. Black Pepper powder.
1tsp. Methi seeds (Fenugreek seeds).
1tsp. Cumin seeds.
¼tsp. Cardamom seeds (take the seeds from about 3 or 4 pods).

Spices (b):
1Tbl. Lemon Juice.
1tsp. Methi Leaves (dried Fenugreek leaves).
1Tbl. Garam Massala.

400g. Tinned Tomatoes (blended, you can buy Tinned Tomatoes already blended).
1 Large Onion (diced).
2Tbl. Tomato Puree (single strength).

3Tbl. Cooking Oil.
Salt (a large pinch or two).
Ghee.
Fresh Coriander (for garnish).

Method:
Crush the seeds (in a mort & pestle), add Spices (a) and make a stiff paste with Water.
Fry the Onion with 3Tbl. oil in a saucepan until golden.
Add the Spice (a) paste and stir fry for 1 minute.
Add the Tinned Tomatoes (blended incl. juice), Tomato puree and Salt, simmer for 15 minutes.
Add pre-cooked Meat pieces or sliced Mushrooms.
Add Spices(b)(the Garam Massala, Methi leaves and 1Tbl. Lemon juice), simmer for another 5 minutes, or until the Mushrooms are cooked.

Garnish with Fresh Coriander and 1tsp. Ghee, serve immediately with rice or breads.
