Rasmalai (makes 8)

Ingredients: 
5Tbl. of Milk Powder.
2Tbl. of Plain Wheat Flour.
1tsp. Baking Powder.
1Tbl. Cardamom Essence (see method).
1tsp. Sugar.
Flaked Almonds, Pistachio kernels, Condensed Milk.

Method:
Soak 10 crushed Cardamom seeds in 1Tbl. boiling water, allow to infuse well.
Put the Milk Powder and Flour into a large mixing bowl and combine.
Add the Baking powder, Cardamom essence and Sugar, mix well.
Add small splashes of water until you have a stiff dough.
Roll the dough into a sausage shape, then divide into 8 equal pieces.
Take each piece and form a ball, then squash it between your palms into a 'flying saucer'.
Drop the dumplings into boiling water for a few minutes until soft and fluffy.

Boil 400 ml. Milk, add 1 Vanilla pod, 3 Cardamom Pods,
4Tbl.Condensed Milk, a few Flaked Almonds and some broken Pistachio kernels.
Simmer for 5 minutes, then allow to cool.
Put the Rasmalai in a bowl and cover them with the Sauce.
Refrigerate overnight, remove the Cardamom and Vanilla pods prior to seving, serve cold.
