Dopiaza (MEDIUM) serves 2
Spices:
½tsp. Cumin seeds.
½tsp. Roasted Cumin seeds.
1tsp. Coriander seeds.
½tsp. Turmeric powder.
½tsp. Chilli powder.

½tsp. Garam Massala powder.
½tsp. Methi leaves.

3Tbl. Cooking oil or Ghee.
3Tbl. Tomato puree.
Pinch of Salt.

1 Onion, sliced thick into ¼ rings.
1 Onion, diced finely.
3 Cloves of Garlic, bruised and diced.
3cm. Fresh Ginger Root, peeled and grated.
Cooked meat (optional) or sliced Mushrooms.

Method:
Grind the seeds in a mort & pestle, add the powders, mix together.
Heat the oil in a large saucepan, add the Onions, fry at medium heat until the Onions are golden.
Add the Ginger and Garlic, stir fry at medium heat for 1 minute.
Add the spices and fry at medium heat for 1 minute, stirring constantly.
Add the Tomato puree, a pinch of salt and a splash of water, stir well.
Simmer for 10 minutes, add the Garam massala and Methi leaves, stir well.
Then add cooked meat or mushrooms and simmer for another 5 to 10 minutes.

Serve immediately with rice.
