Jalfrezi (HOT) serves 2

Spices:
1tsp. Cumin powder.
1tsp. Coriander powder.
tsp. Turmeric powder.
tsp. Chilli powder.
tsp. Black Pepper powder.

tsp. Cumin seeds.
tsp. Methi seeds.
tsp. Mustard seeds.

3Tbl. Cooking oil.
1Tbl. Red Wine Vinegar (or enough to make a stiff paste).
1Tbl. Worcestershire sauce.
Pinch of Salt.

1 Onion, sliced thin into  rings.
1 Green Capsicum, sliced thick into  rings.
Cooked meat (optional) or sliced Mushrooms.

Method:
Mix all the spice powders together with the Vinegar to form a paste.
Heat the oil in a saucepan and add the Cumin, Methi and Mustard seeds, when they start to sizzle add the Onion and Capsicum, fry at medium heat until the Onion is golden.
Add the cooked Meat if desired (allow to re-heat before adding spices), or Mushrooms (wait until they are cooked before adding spices), or TVP (Soya chunks).
Add the spice paste and fry for 1 minute, stirring constantly.
Remove from heat, add the Worcestershire Sauce and Salt, stir for a few seconds.

Serve immediately with rice.
