Athenian Artichoke Dip
1 can (14 oz.)
artichoke hearts in water, drained and chopped
4 oz. feta cheese,
chapped
¼ cup red or green
bell pepper, chopped
1 garlic clove,
pressed
1 cup mayonnaise
3 green onion with
tops, thinly sliced
¾ tsp. dried oregano
leaves
¼ cup sliced almonds
(optional)
Preheat oven to 350
degrees. Blend artichoke, cheese and
bell pepper in medium bowl. Press garlic
into bowl. Add mayonnaise, green onions
and oregano; mix well. Spoon into 8-inch
baking dish. Top with almonds. Bake 25-30 minutes or until golden brown and
bubbly. Serve with assorted crackers,
baked pita chips or veggies.
