Oldgirl's ~ Oatmeal Chocolate Chip Cookies ~

~Makes 6 to 7 dozen
~Do NOT over bake, use middle rack of oven,
~OvenTemp: 325 degrees
~Baking time: 11-14 min (depending on oven)
Cream together:
1 cup margarine (do NOT use butter)
1 cup white sugar
1 cup hard-packed brown sugar
Add and mix:
2 eggs
1 tsp vanilla
Add and mix well:
1 � cup flour
1 tsp salt
1 tsp baking soda
Add and mix well:
2 cups quick oats (do NOT use the large flakes)
1 300 gr package of mini chocolate chips
Drop by teaspoonful on ungreased cookie sheet
Reminders from my mother (aged 96):
(1) Never smack the cup on the counter when measuring flour. The more you smack it down, the more flour you will be adding. Years ago recipes always referred to �sifted � flour, allowing same to be light and fluffy. (2) Always �hard pack� brown sugar, unless recipe refers to �lightly packed�. (3) Use an oven rack in the middle of the oven when baking cookies and cakes. (4) Always use butter if the recipe calls for butter.
