CHINESE GREEN BEANS
1 pound fresh green beans 1 tblsp chopped green onions 2 cloves garlic, pressed 6 thin slices fresh ginger 3 tblsp sesame oil 1 tsp sugar ½ tsp soy sauce ¼ cup water
Cook beans in boiling water to cover 3 to 4 mins; drain and plunge into cold water to stop the cooking process. Drain on paper towels. Cook green onions, garlic and ginger in hot oil in a skillet 1 minute, stirring often; add sugar, salt and soy sauce, and cook until sugar dissolves, stirring often. Add beans and water; reduce heat to medium and stir fry 3 mins. Serve immediately. |
