Recipe of the Month - October 2004


SKILLET GOULASH

8 oz (2 2/3 cups) uncooked rotini (spiral pasta)
1 lb lean ground beef
1 � c chopped celery
1 c chopped onion
2 (14.5-oz) cans diced tomatoes, undrained
1 (10 3.4-oz) can condensed tomato soup
1 tsp dried basil leaves
� tsp salt
� tsp pepper


Cook rotini as directed on package. Drain. Meanwhile, in 12" nonstick skillet or Dutch oven, cook ground beef, celery and onions over medium high heat for 5-7 minutes or until beef is thoroughly cooked, stirring frequently. Drain. Add cooked rotini and all remaining ingredients; mix well. Bring to a boil. Reduce heat; simmer 10 minutes, stirring occasionally.
