Recipe of the Month - July 2004
Summer Parfaits
2 cups strawberries
2 cups blueberries
2 cups cut-up pound cake   (about a 2# cake)
1/2 cup sugar
1 tub Cool Whip
Cut up the strawberries and cover with 1/4 cup sugar. Wash and clean the bluberries
and cover with remaining sugar. Cut the pound cake into cubes that are bite sized. In parfait glasses, layer pound cake, strawberries, Cool Whip, blueberries, pound cake, Cool Whip. Add a couple of each berry to the top for garnish. Put in refrigerator until time to serve.
Makes 4 parfait glasses.
