Beer-Cheese Dip
Butterscotch Coconut Drops

� cup sugar
� cup firmly packed brown sugar
1 cup butter, softened
2 eggs
1 tsp vanilla
2 � cups all-purpose flour
1 tsp baking soda
� tsp salt
2 cups flaked coconut
1 cup butterscotch-flavored chips

Heat oven to 375 degrees. In large mixing bowl combine sugar, brown sugar and butter. Beat at medium speed, scraping bowl often, until creamy (1-2 minutes). Add eggs and vanilla; continue beating until well mixed (1-2 minutes). Reduce speed to low; add flour, baking soda and salt. Continue beating, scraping bowl often, until well mixed (1-2 minutes). By hand, stir in coconut and butterscotch chips. Drop by rounded tspfuls 2" apart onto cookie sheets. Bake for 9-11 minutes or until edges are golden brown. Let stand 1 minute; remove from cookie sheets.

Makes 4-1/2 dozen cookies
