Beer-Cheese Dip
Cheesy Herb & Beef Bites

10 thin slices cooked roast beef, about 4" in diameter (from 6-oz package)
� cup Garlic-Herb cheese spread (see below) or purchased garlic and herb spreadable cheese
� cup finely chopped red bell pepper
40 bite-size garlic-flavor or regular bagel chips or round buttery crackers
2 tsp chopped fresh parsley or chives

Unfold each beef slice until flat. Spread each slice with 1 tsp Garlic-Herb cheese spread; sprinkle with 1 tsp bell pepper. Carefully roll up. Cut each roll into 4 pieces. Place each beef roll on bagel chip. Garnish with parsley. If desired, use small star cutter to cut star shapes from red bell pepper to garnish serving place. Serve immediately.

TIP: You can unfold the beef slices and spread with the cheese and bell pepper but do not cut, cover and refrigerate until ready to serve.

Garlic Herb Cheese Spread

2 packages (8-oz each) cream cheese, softened
3 T half-and-half or milk
1 tsp Italian seasoning
1/8 tsp salt
1 clove garlic, finely chopped

In large bowl, beat all ingredients with electric mixer on medium speed 2-3 minutes or until light and fluffy. Place cheese mixture in bowl and cover. Refrigerate until ready to spread on beef slices.

Makes 40 appetizers
