| WINTER SWEETS Walnut Cinnamon Roly-Poly 2 cups self raising flour 1/4 teaspoon salt 125gm butter 4-5 tablespoons iced water Rub butter into flour until it resembles fine bread crumbs. Add enough cold water to make a soft dough. Roll out to a rectangle about 25 x 20 cm. Filling: 1 cup crushed walnuts 2 teaspoons cinnamon 1/2 cup brown sugar 60gm softened butter 1 large apple peeled cored and chopped Mix together and spread over dough leaving a border 1cm all around the edge. Fold the border in and then loosely roll the dough up from a short side. Place in a shallow baking dish seam side down,that will leave about a 8cm gap all around. Make 3 slashes in the top to allow steam to escape. Syrup: 1 1/2 cups of water 1/2 cup sugar 2 teaspoons cinnamon Place in a saucepan and bring to boil stirring constantly till sugar is dissolved. Remove from heat and immediately pour around the sides of the dough. (DO NOT POUR OVER THE TOP) The syrup should come no more than half way up the sides of the dough. Place at once in a preheated oven 200C, and bake 30 min or until top is golden and the bottom has absorbed most of the syrup. Serve at once with custard. Fast & Easy Apple Pudding 4 large apples, peeled, cored and sliced 1 cup cold water 2 level tablespoons butter 4 tablespoons self raising flour 1/2 cup sugar Rub butter into flour and sugar. Beat in cold water. (it looks like curds) Arrange apple slices over base of shallow casserole dish. Pour batter over the top of the apples. Bake 180C 45 minutes or till top is golden brown. Serve hot with custard or icecream. |
