SWEET TOMATO SAUCE

4 qts. tomatoes (cut up with skins on -
Cook, put through Colander and use juice)

Next - Add the following and Cook until Vegetables are done:

2 white onions - chopped fine
2 green peppers - chopped
1 bunch of celery - chopped fine
6 tsp. brown sugar
2 Tbsp. chopped garlic or garlic powder
2 tsp. chili powder
2 Tbsp. lemon juice

Jars should be heated but not boiled and
sealed with lids brought to a boil (do not boil).
The lids can be heated with water in a deep frying pan.
Make sure lids are covered with water and
are turned upside down so they won't seal.
Put 1 tsp. of canning salt into each jar;
then put the boiled tomato sauce into the jars
Take a rubber spatula & insert into each jar before sealing
to remove the air bubbles. Also, wipe the top of the rim
and sides to remove any liquid that may prevent them from
sealing.

*This sauce is good in chili, on spaghetti, etc.
